About Aquiaras Estate

Situated on the lush slopes of the Turrialba Volcano in Cartago province, Aquiares literally means “land between rivers” in the indigenous Huetar language — referring to the farm’s position between the Aquiares and Turrialba rivers. The estate traces its origins back to 1890 and has grown to be the largest single coffee estate in Costa Rica, with a community of over 1,800 people living and working on the land. 

Aquiares has become synonymous with progressive agricultural practices, varietal innovation and transparency in sourcing. Workers and their families live on-site, many having real ownership of their homes, thanks to initiatives launched by Diego’s father, Alfonso Robelo. The estate also stands out in the sustainability space: it achieved full carbon-neutral certification and has been praised for implementing agro-forestry corridors, rich shade canopy systems, and biodiversity-friendly practices. In fact, the farm has been shown to be carbon-negative, storing more CO₂ in its shade trees and forested corridors than it emits.

Processing:

Washed Process – Pulp & mucilage are detached, cherries are mechanically washed and undergo a 6 hour partial fermentation and are then dried for 32 hours using a Guardiola drying machine. The Guardiola machine is a drum drier that allows increased airflow allowing for more even drying and fewer defects than other drying methods.
